An Ensamble is an agave spirit where 2 or more agaves varieties are roasted, milled, fermented and distilled together.
For our Ensamble we used Agave americana 50% and Agave angustifolia 50%. Fermentation took 18 days and was distilled mid 2019.
This spirit has proven a favourite with mezcal lovers. The nose has some smoke and melon and that funky blue cheese and spices on the palate. Very long, viscous finish. Surprisingly smooth for 50%. Only 60 bottles in the batch.
Definitely a slow, neat sipper from a copita or other mezcal glass.
